Esta interesante cepa proveniente del Piamonte italiano o de la cepa francesa corbeau noir (existe amplia polémica), es hoy por hoy la uva de mayor proyección en Argentina. Por muchos años se utilizó como base para producción de vinos de corte (mezcla de diversas uvas), pero dadas sus inigualables características, ahora es la segunda cepa más plantada en Argentina.

Los vinos producto de esta uva son armoniosos, con taninos elegantes y atractivos aromas a frutos negros, cedro y de forma muy específica, helecho.

Es una variedad bastante difícil de obtener. Tiene un ciclo de maduración muy largo. Hay que llegar a un punto de madurez alto de la fruta para lograr un buen vino. El racimo es bastante compacto y apretado, por lo que sufre enfermedades criptogámicas (enfermedades que se producen en la planta) fácilmente.

La bonarda, que se cultiva en Argentina desde hace muchos años, se aclimató a la perfección en aquel país sudamericano. Mientras que en 1936 se registraba un cultivo de 6,000 hectáreas, para el año 2001 ya se superaban las 15,000, por debajo únicamente de la tradicional uva malbec.

Con relación al enigma de su origen, hoy tenemos una explicación probable. La corbeau noir es originaria de la Savoya francesa y del Piamonte italiano. Estas son zonas vecinas, separadas por los Alpes, y han estado tradicionalmente muy conectadas.

Un buen vino bonarda se caracteriza a la vista por su color rojo rubí intenso con tonalidades violáceas y púrpuras. En la nariz es intenso y se encuentran aromas a frutos del bosque maduros (moras, cassis y cerezas) con atrayentes toques especiados. En boca su ataque es agradable y de buena intensidad. Una de las características más importantes se ve expresada en la suavidad de los taninos bien maduros amalgamados con la fruta.

Como claro ejemplo de la evolución de los vinos bonarda de Argentina, me permito sugerir el vino Lurton Boyarda, cosecha 2007, de Mendoza (Valle de Uco), que cumple cabalmente con la anterior descripción y adicionalmente presenta interesantes aromas herbáceos, destacando laurel y tomillo. Su proceso de elaboración cuenta con una fermentación alcohólica a bajas temperaturas, poco tiempo de encubado en acero inoxidable, fermentación maloláctica en cuba y clarificación previa al embotellado.

Este vino se puede beber sin problemas a unos 15-16 grados y acompañar comidas medianamente condimentas y ligeramente picantes
