Los orígenes de la uva Cabernet Sauvignon
Hace tan solo 16 años, un par de investigadores de una universidad californiana rastrearon los orígenes de la uva Cabernet Sauvignon que nunca habían sido definidos desde que se conoce esta variedad, por lo que a lo largo de la historia era denominada con diferentes nombres.
Esta investigación descubrió entonces que la uva era producto de la mezcla de dos variedades nativas de Francia: Cabernet franc y Sauvignon blanc. Se supone que esta mezcla se produjo alrededor del siglo XVII cuando la práctica de cultivar distintas variedades de uva en un viñedo y luego cosecharlas y producir vino a partir de todas ellas juntas era algo común, principalmente en la región vinícola de Burdeos.
